Les solidarités professionnelles des bouchers toulousains au prisme des enregistrements de maîtrises (1465-1510)

Abstract : The municipal archives of Toulouse possess two registers of the new masters admitted into the guilds during the years 1465-1485 and 1495-1510. They take an oath in the presence of at least two witnesses in addition to one or several persons who act as guarantors. These sources have scarcely been studied, although they offer a precious evidence of the professional relationships developed by the members of the guilds. In the food sector, several professions are concerned: butchers, candle makers, bakers (divided between those who make the bread and those who bake it) and, finally, pastry cooks. By comparison, the butchers are embedded in networks that show a certain closure and concentration of the members of their guild within certain districts of the city.
