La culture du cresson en Essonne : valorisation d'un produit, reconnaissance d'un terroir ?

Abstract : The traditional culture of watercress in the Essonne district, and more generally in France, has been suffering a crisis since the sixties which has ultimately put it in difficulty and at risk of disappearing. Frequently eaten during the first half of the XX th century, this product is today nearly forgotten and doesn't seem to find his way through our culinary habits. Nevertheless, we can consider the watercress as an important part of our cultural and environmental legacy, put at risk by an increasing urbanisation and maladaptive sanitary standards. The culture of watercress must be viewed as a typical rural product of Essonne in order to be protected and valued on a national scale.
