Résumé

Three main periods are characterized by the different meanings and uses of the spellings Pineau and Pinot from 1375 to 1901. A permanent and confusing meaning of pineau is that of delicate grape variety or wine. A “pinaud” quoted in an 1183 charter is irrelevant. 1. - From 1375 to 1611, Pinot was black and from Burgundy, Pineau was white and from the Loire Valley. 2. - From 1667 to 1896, Pineau was almost the unique spelling recorded in academic books, dictionaries and ampelographic works, mainly standing for Pinot. Pinot also appears to have been kept constantly in use in current language in Burgundy, stressing the gap between the academic world and that of wine craftsmen and merchants. 3. - 19th cent. Ampelographs made things less confusing in successive phases: in 1875 the name of the Loire Pineaux was changed for Chenins. In 1896, the spelling Pinot was assigned to Burgundian (and Eastern France) varieties. In 1901-1909 the famous Ampelography edited by P. Viala and V. Vermorel enforced the exclusive uses of Chenin and Pinot throughout the seven volumes of the collection.
Les usages des mots pineau et pinot, de 1375 à 1901, révèlent des sens différents qui définissent trois grandes périodes pendant lesquelles pineau a de plus le sens de raisin ou de vin délicats. Une mention isolée de 1183 doit être écartée. De 1375 à 1611, Pinot est noir et bourguignon, Pineau est blanc et ligérien. De 1667 à 1896, Pineau est la graphie quasi-exclusive dans la langue des savants, des lexicographes puis des ampélographes, ce qui engendre des confusions. Pinot apparaît confiné à la langue parlée dans la France de l’Est. Dans l’élaboration du vocabulaire ampélographique, la confusion est réduite en plusieurs temps à partir de 1875 : pour l’Ouest Pineau blanc est abandonné au profit de Chenin et en 1896, Pinot est substitué à Pineau en Bourgogne. L’Ampélographie de Viala et Vermorel impose cette distinction en 1901.
